I was awoken by the pooches before half five so got dressed and took them out for a two mile walk, doing the Arran Way Loop. My walking is getting easier, with only the occasional twinge, and slightly faster although it’s difficult to walk at a steady pace with two dogs.
Back at home, I finished getting ready for work, fed the dogs and headed out.
Over the past couple of days, I’ve had a bit of an urge for dumplings so using the ol’ t’internet, found a recipe for some suet-less dumpling utilising butter instead. On the same site (LINK) was a recipe for beef and Guiness pie which I could use substituting Quorn for the meat.
I prepared the dumpling mix and got the ingredients for the stew fried and dumped into a casserole. A can of Guiness was poured in and the whole lot placed in the oven to simmer away for an hour or so.
I had an appointment at the chemist from my annual COVID jab at five so with dinner cooking, I took a slightly longer than necessary walk clocking up another mile and a bit bringing my daily total to 3.1 miles.
After receiving my booster, I took an easy walk to meet Sue from work at half past.
Back home, I rolled the dumplings into ball and deposited them into a pan of boiling water to cook for around half an hour.
